Thekua is Bihar's hand-pressed wheat biscuit: the prasad offered to Surya Dev at Chhath, and a tea-time snack the rest of the year. Ours is made in Adra, West Bengal, pressed in a wooden saancha and made with desi ghee, with no preservatives and no palm oil.
