What is thekua?

Thekua is Bihar's traditional Chhath prasad. Families make it by the basketful, offer it to Surya at sunset and sunrise, then share it with everyone.

Ours follows the Bihari recipe: wheat flour, suji, coconut and jaggery or sugar, made with desi ghee. Each piece is hand-pressed in a wooden saancha, so it carries its own pattern, then fried golden.
